After the first day, the sourdough may be bitter. Therefore, it needs to be refreshed as follows:

Refreshing the sourdough (4 hours at 32C):

50 g already obtained sourdough

75 ml warm water

75 g whole grain rye flour

We dilute the sourdough with warm water and add flour. We leave in a warm place under the film for 4 hours at a temperature of 32 degrees.

Comment: The refreshing procedure can be repeated and leaven for another 4 hours.

Malt

Rye red fermented malt is what gives flavor to Russian black bread and kvass. We are all familiar with this taste of malt from childhood, although we may not be aware that this is it. Try rye bread in Germany, they also use malt, but this is a completely different malt and the taste of German bread is completely different, unusual. So we can't do without malt.

It is not difficult to buy it - ground rye malt is available in baker's shops, it can be ordered on the Internet (rye malt is also available in shops for brewers and moonshiners, often in an unground state, but everywhere you can ask for grinding, it is best to ask in advance (approx. ed. .).

Malt must first be brewed with boiling water. 50 g of malt per 200 ml of boiling water. Brew, let cool and use.

Rye pancakes

200 g wheat flour

125 g whole grain rye flour

50 g rye malt

1 cup boiling water

25 g sunflower oil

5 g pressed yeast

40 g sugar

250 g porch

Step 1. Mix all dry ingredients, pour over brewed malt.

Comment: It is not necessary to sift flour, modern flour is sold already sifted. Everyone thinks that by sifting they saturate the flour with oxygen. But imagine that you have saturated a finely dispersed mixture with oxygen, and then diluted it with water. Oxygen immediately leaves. You need to saturate the dough with oxygen. Therefore, the dough is kneaded. Gluten is formed in the dough, which at the moment of kneading covers an air bubble, and like it or not, and gases begin to dissolve in it.

By the way, for pancakes, the sequence of adding ingredients to the dough is not important, you can put everything in a bowl and mix. With the exception of only vegetable oil, it makes mixing difficult.

Step 2. Add a pretense or sourdough, crumble the pressed yeast.
