Do not forget to peel the potatoes, as this is a necessary ingredient for this soup, try to cut them into even bars.

Now you can move on to millet, since this is an equally important ingredient. Please note that it will need to be rinsed thoroughly by filling it with water intended for swelling. After such manipulations, you can send it to the pan, seasoning the soup with salt to taste, but try not to overdo it.

  • This soup should contain root vegetables. Remember that they are the ones who are able to fill its taste with an amazing and excellent aroma, adding even more vitamins.
  • Additional ingredients will include potatoes, mushrooms, eggs, but everything is individual here, as it depends on personal taste preferences. But one thing can be said for sure: in any case, every soup turns out tasty, healthy and satisfying, and this is the most important thing.

Before you start preparing soup with millet, a recipe with step-by-step photos of which you will find on the Internet, you need to clean the millet from impurities, be sure to fill it with water, this is done for swelling. As a rule, many chefs often recommend pouring boiling water over millet; here you must rely on your personal taste preferences, making a reasonable and true decision for yourself.

Step 1: Prepare the chicken.

First of all, take fresh chicken wings, rinse them thoroughly under cold running water, dip them in paper kitchen towels, place them one by one on a cutting board and cut them into three parts at the joints with a kitchen knife. We remove the outer phalanges, place the remaining pieces in a deep saucepan with a capacity of 4–5 liters and fill with the required amount of purified water.

Step 2: cook the broth.

Place the dish with the chicken over high heat. As soon as the water begins to boil, reduce it to a small level and cook the broth for 40–50 minutes under a covered lid, periodically remove the white-gray foam - coagulated protein - from its surface with a slotted spoon.

Step 3: Prepare the remaining ingredients.

While the chicken is cooking, prepare the rest of the ingredients you will need for the soup. Using a clean knife, peel the onions, carrots and potatoes. Then we wash them, dry them and chop them on a clean cutting board. Cut the potatoes into slices up to 2-2.5 centimeters in size, immediately place them in a small bowl and fill with running water so that it completely covers them.

Chop the carrots on a coarse grater, and chop the onion into small cubes up to 1 centimeter in size. Then we sort through the yellow millet, simultaneously removing damaged grains and debris of any kind. Next, pour it into a sieve with a fine mesh, rinse thoroughly and leave there until the time of use, so that the excess liquid dries out and the cereal dries.

Step 4: cook potatoes with millet.

In 40–50 minutes, drain the water from the potatoes and place them in a saucepan with the prepared broth. Add dried millet there, mix everything and cook 5 minutes.

Step 5: prepare the dressing.

Meanwhile, place a frying pan on the adjacent burner and pour a couple of tablespoons of vegetable oil into it. After a few minutes, add chopped onions and carrots to the heated fat. Stirring them occasionally with a kitchen spatula, fry the vegetables over medium heat. 2–3 minutes.

Step 6: Bring the soup to full readiness.

After the onions and carrots have softened, transfer the resulting dressing into a pan with boiling potatoes and cereal. Season the almost finished soup with bay leaf, salt and ground black pepper to taste and continue cooking 12–15 minutes until vegetables are fully cooked. Then turn off the stove and leave the first dish covered for a while longer. 5–7 minutes. Then, using a ladle, pour it into deep plates and serve it to the table.

Step 7: serve millet soup.

Millet soup is served hot as a first course for lunch. It is served in portions in deep plates, first sprinkled with fresh finely chopped dill, parsley, cilantro or green onions.

It is a pleasure to enjoy this dish along with fresh bread, crackers and sour cream. Fast and inexpensive!

I suggest making a light soup with millet and vegetables. I would like to say a few words about millet. If the cereal is yellow, this indicates its freshness. Even if the millet does not contain debris, then it does not need to be washed with water. It is enough to periodically remove the foam from the surface of the liquid.
Millet soup is healthy and does not contain fried ingredients, suitable for baby food. Of course, if you really want, you can fry the onions and carrots in vegetable or butter. But it’s still better to do without this process.
Potatoes and millet are cooked almost identically. For soup, I cut the potatoes into medium pieces, or even cubes. It is better to add greens at the end of cooking. In winter, frozen is also suitable, so in summer you need to take care of such preparations. Since the soup does not contain fried ingredients, for a creamy taste I recommend adding oil with a fat content of at least 72.5%. And you need to eat millet soup after it has stood for a while.

how to cook millet soup recipe with photo

Ingredients:

  • raw potatoes – 500 g,
  • drinking water – 2 l,
  • millet cereal – 2 tbsp.,
  • onion – 1 pc.,
  • carrots – 3 tbsp.,
  • table salt – 1 tbsp.,
  • butter – 1 tbsp.,
  • frozen dill – 1 tbsp.,
  • bay leaf – 0.5 pcs.

Cooking process:

I pour clean water into the pan and put it on low heat. I peel the potatoes and rinse them in water. And then I cut it into small pieces. I pour the potatoes into hot water and turn on high heat. After boiling, foam begins to appear. I reduce the heat and skim off the foam with a spoon. I cook the potatoes for about 10 minutes.

Then I add millet cereal and stir.

I take frozen carrots, so I measure them with a spoon. If you use fresh carrots, you will need half a root vegetable. I cut the onions into small cubes. Pour carrots and onions into the pan. I cook the food for 15-20 minutes.

During this time, some of the water will evaporate, so I add water and bring it to a boil. If the foam collects, it needs to be removed. I pour in a level tablespoon of salt, this is enough for 2 liters of soup.

After about 5 minutes I pour out the frozen dill. I add butter and bay leaf. Let the soup simmer for 5 minutes, turn off the heat and cover with a lid.

After 30 minutes I serve a delicious light soup to the table. Since the soup is not too filling, I can safely serve it with a meat or liver dish. For example, millet soup can be eaten with liver balls and pork chops.
